Sweet Potato, Kale and Shrimp Skillet


If you're looking for a quick and easy recipe for supper tonight, this is it!

Sweet Potato, Kale and Shrimp Skillet

Ingredients:

  • 2 tablespoons Olive Oil

  • ½ cup Onion, diced

  • Red Pepper Flakes (to taste)

  • 2 Garlic Cloves, minced

  • 2 cups Sweet Potatoes, diced

  • 2 cups Shrimp

  • 3 cups Kale leaves, roughly chopped

  • Salt

  • Black Pepper ground

Directions:

  1. Over medium heat add Olive Oil to skillet

  2. Add onions and red pepper flakes. Cook until softened and golden.

  3. Add garlic and cook for 30 seconds.

  4. Add sweet potato and cook until soft (10-15 minutes). You may want to add a couple tablespoons of water to steam the sweet potato.

  5. Add shrimp and cook until pink.

  6. Turn the heat to low and add kale. Do not cook for very long or kale will become soggy in texture.

  7. Add salt and pepper to taste.

  8. Enjoy!
